One concern is contamination. When water is exposed to the open air for hours, it can accumulate dust, bacteria, and even insects. If the glass is not covered, airborne particles and microbes from your surroundings may settle into the water.
Even a sealed bottle can become contaminated if you drink directly from it and leave it open, allowing bacteria from your mouth to multiply.
Another reason to avoid drinking overnight water is chemical changes. Water left in plastic bottles can absorb chemicals from the plastic, especially if the bottle is exposed to heat.
Even in a glass, water can slightly alter its pH due to carbon dioxide absorption, making it taste stale.
Additionally, stagnant water is an ideal breeding ground for bacteria, especially in warm environments. If you frequently drink from an open glass, bacteria from your mouth can also multiply in the water overnight.
